~ Stara’s Carrot & Beet Salad ~

Ingredients

• 2 ½ cups grated carrots – can use food processer also
• ½ cup grated beets
• ¼ cup chopped cilantro plus some for garnish
• 2 Tbs. lemon juice
• 1 Tbs. Eden Ume Vinegar
• 3 Tbs. olive oil
• ½ tsp. salt or to taste
• ¼ tsp Creole-style seasoning
• 1 tsp. whole cumin seeds
• 1 tsp. coriander powder
• ½ cup chopped walnuts

Directions

1. Prepare carrots and beets.
2. Add the cilantro and mix well.
3. Place in a jar the lemon juice, vinegar, olive oil, salt, seasoning, cumin seeds and coriander powder. Shake until well mixed
4. Pour over the vegetables and toss.
5. Top with the walnuts and a few sprigs of cilantro

 

~ Super Zee Salad Supreme ~

Ingredients

• 1 cup finely grated carrot
• 1 cup finely chopped celery
• ¼ cup finely grated beet
• ¼ cup diced radish
• ¼ cup chopped purple cabbage
• 2 tsp. finely grated ginger
• 4 cups organic baby spinach or chopped spinach

Directions

1. Lovingly place all veggies in a beautiful bowl.
2. Toss with Super Zee Dressing.
3. Sprinkle with 1 tsp. of Super Zee Nutri-Mix.
4. Serve immediately for optimal nutrition!

~ Super Zee Dressing ~

Ingredients

• 1 cup olive oil
• ¼ cup apple cider vinegar (some taste buds prefer less tart)
• 2 Tbsp. honey
• 2 cloves of garlic crushed
• 1 tsp. sea salt
• 1 tsp. celery seed powder
• 1 tsp. coriander power
• 1 tsp. rosemary powder
• ¼ tsp. cayenne

Directions

1. Shake in a jar to marry forever.

~ Super Zee Nutri-Mix ~

(This is the same recipe found in the Dips & Dressings section)

Ingredients

• ½ cup kelp
• ¼ cup maca root powder
• ¼ cup bee pollen
• ¼ cup Spirulina powder
• 1 Tbsp. sea salt

Directions

1. Shake all ingredients together in jar
2. Adjust salt to your own taste
3. Use approximately 1 tsp. mix on top of an individual salad
4. Great on sandwiches too!
